food science technical CERTIFICATE
This two semester certificate is designed to give participants an introduction to Food Science, Food Technology, and Food Business with a particular emphasis on operationalfunctions including food safety, quality and sanitation. In addition, candidates for this certificate will demonstrate a clear understanding of the food chain from raw material to
end product. Students receiving the certificate should be prepared to compete more successfully for positions within the food processing industry and have a foundation of skills
to be successful in those positions.
Students completing the program should be able to:
- Understand and apply principles of Hazard Analysis Critical Control Point (HACCP) planning to daily job requirements.
- Develop and maintain an environment in compliance with Good Manufacturing Practices (GMP) and conducive to quality audits.
- Apply knowledge of product quality to enable quick recognition of unsatisfactory part, component or finished product quality.
- Understand the importance of process control to overall product quality and safety.
- Work with peers and support departments to identify issues and solutions in food production environments.
- Communicate critical information clearly as during shift transitions or in generation of standard operating procedures.
- Identify and communicate resources required to improve operations, quality or productivity.
- Utilize basic math skills in product or quality applications.
- Understand the regulatory environment in food processing facilities and the impact of actions on regulatory compliance
